Sheet Pan Garlic Butter Salmon

If a meal can be made with fewer dishes to clean up then by all means that is what we should be doing! (At least this is my opinion) Don't get me wrong, I do believe in the therapeutic benefits of washing dishes (everything in our house is washed by hand since we do not have a dishwasher) but it is only therapeutic for so long and we only have so much time, ya know?


Not only is this recipe quick and low in dish use it is also high in omega 3 fatty acids EPA & DHA. These are found in seafood such as fatty fish (ex: salmon, tuna, and trout) and shellfish (ex: crab, mussels, and oysters).

Research shows some of the benefits may include:

  • Preventative heart health

  • Brain function

  • Eye function

  • Improvement in rheumatoid arthritis symptoms

  • Fetal growth & development as well as infancy and childhood

So here it is, sheet pan garlic butter salmon.


RECIPE:

3 Medium Sweet Potatoes (diced small)

2lbs Salmon

8oz Fresh Green Beans, trimmed

2T Olive Oil

3 Garlic Cloves, minced (or 3t pre-minced garlic)

Salt and Black Pepper, to taste

2T Fresh Parsley, Chopped


Garlic Butter Sauce:

1/3c Butter, melted

2t Brown Sugar

2t Lemon Juice

3 Garlic Cloves, Minced (or 3t pre-minced garlic)

1/2t Dried Oregano

1/2t Dried Thyme

1/2t Dried Rosemary

Salt and Black Pepper, to taste


Directions:

1. Preheat oven to 400 degrees F. Grease baking sheet.

2. In a small bowl, whisk butter, brown sugar, lemon juice, garlic, oregano, thyme, rosemary, salt, and pepper.

3. In a large pot of boiling salted water, cook potatoes until parboiled for 12-15min, drain well.

4. Place potatoes, green beans, and salmon in a single layer onto the greased baking sheet.

5. Drizzle green beans and potatoes with olive oil and sprinkle with garlic, salt, and pepper.

6. Spoon butter mixture over salmon.

7. Place in oven and cook until the fish flakes easily with a fork, about 16-18min.

8. Serve immediately, top with fresh parsley if desired!
