Granola

My mom and I started making this granola at least 9 years ago and we've stuck with it for our tried and true recipe since. I'd say it has a pretty good track record. Full of whole grains, fiber, healthy fats, and protein AND low in sugar. I mean what else could you want? A good side note is that it fills your home, apartment, dorm, etc with the warm smells of fall. YUMS. ALL. AROUND.


RECIPE:

4c Old Fashioned Oats

1c Flaked Coconut (optional)

1/2c Wheat Germ

1/2c Flax Seed

1/4c Chia Seed

1c Slivered Almonds

1/2c Pumpkin Seeds

1 1/2t Salt

1 1/2t Cinnamon

1/4c Canola Oil

1/4c Brown Sugar

1/4c Honey

1/3c Water

1T Vanilla


DIRECTIONS:

1. Combine oats, coconut, wheat germ, flax seed, chia seeds, almonds, pumpkin seeds, salt, and cinnamon in a large bowl.

2. Mix oil, brown sugar, honey, water, and vanilla in a medium sauce pan on the stovetop set to medium heat.

3. Drizzle over dry ingredients and mix to combine. (Don't worry if some chunks form they make the best pieces!)

4. Place all combined ingredients in a 13x9 inch pan and bake at 275 for 1 hour stirring every 15-20 minutes.

5. Once completely cooled place in a glass jar for safe keeping!

6. Enjoy with yogurt, ice cream, baked apples, by it's self as a snack, etc!

You know it's a good recipe when it makes it on the inside of the cupboard door beside a diy stained glass art frog from a craft at Mimi and Grandpas house with the cousins years ago!
